Chocolate Courgette Cake and Frosting (Zucchini)

Chocolate Courgette Cake  (Zucchini)  Very popular!

55 gr butter
¼ cup vegetable oil
1 cup sugar
1 egg
1 tsp vanilla extract
¼ cup crème fraiche
1¼ cup plain flour
2 tbsp unsweetened cocoa powder
½ tsp baking powder
1 tsp baking soda (bicarb of soda)
1 tsp cinnamon
1 cup grated courgette
¼ cup dark chocolate, chopped or grated

Method:

Preheat oven to 180C

Cream together the butter and sugar. Add the oil, egg, vanilla and crème fraiche, and mix well.

Mix all the dry ingredients separately then add to the creamed mixture slowly, beating until well mixed.

Stir in the courgette and the dark chocolate.

Spray a loaf tin with non stick spray, add mixture, and bake for 40 - 45 minutes, until a skewer comes out clean. Allow to cool on a rack


Chocolate Cheese Frosting

100gr Mascarpone cheese
25 gr butter, room temperature
1½ Cups icing sugar
¼ Cup cocoa powder

Mix cheese and butter with sugar until creamy, add cocoa and mix well, spread over cake when cool
