Courgette (Zucchini) Chutney 2

2.2kg courgettes (zucchini) chopped
1.5kg onions chopped
1.5 kg tomatoes chopped (Italian tomatoes are best, not so much juice!)
1 kg brown sugar
2 granny Smith chopped

About 3 ins of fresh ginger grated
Several twists of freshly ground pepper to taste
600ml red wine vinegar
6 large cloves of garlic grated
1 heaped tspn dry crushed chilies

Put all into a large saucepan and bring slowly to the boil, stirring now and again. Simmer for about two hours until thick. (Stir occasionally to prevent sticking) Pour into heated jars and seal.  Allow 2 to 3 month to mature.
