2 to 3 very fresh, small courgettes or if larger quarter one.
1 garlic clove, finely chopped
1 small onion finely chopped
small bunch chopped chives
small handful of mint, finely chopped
3 tablespoons extra virgin olive oil
2 teaspoons lemon juice
2 teaspoons cider vinegar
1/2 teasp of sea salt
freshly-ground black pepper to taste
pinch of cayenne pepper or a dash of Tabasco(optional)
Wash courgettes and slice very finely. Put into dish sprinkle with salt and mix; leave covered for at least 30 mins. Put into colander and press water out with a plate. Put back into dish, and add all other ingredients and mix well.
Put in fridge for minimum 1 hour to let the flavours develop.
I served this on sliced tomato sprinkled with pepper and it was delicious.
