Lemon Courgette Cake  (Zucchini)The chocolate Courgette cake beats this by a small margin)

Serves: 12

200g (7 oz) grated courgette
150g (5 oz) caster sugar
1 egg
125ml (4 fl oz) vegetable oil
200g (7 oz) plain flour
1/2 teaspoon salt
1 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
Zest from one lemon


Preheat oven to 160 C Spray a loaf tin with non stick spray.

In a bowl, beat together the courgette, sugar, egg and oil. In a separate bowl, mix together the flour, salt, bicarbonate, baking powder, cinnamon and lemon zest. Add the two mixtures and mix lightly. Pour the batter into the prepared tin.

Bake for 45 minutes checking that a skewer inserted into the cake comes out clean. Cool and watch it disappear before your eyes!!
