Madeira Cake

Madeira Cake

2 eggs
¾ cup sugar
2 teasp Baking powder
1 teasp vanilla
4 ozs (113gr) margarine
1 ½ cups flour
½ cup of milk

Beat all ingredients together adding the milk last for 3 minutes.

Mixture should be thick not runny.

Bake 180º C for 55 mins in a loaf tin.

Note: I have a fan oven and I find 170º for about 45 to 50 minutes is enough. Diane

This recipe could not be easier and is really good. It was another one given to me many years ago by Janey in South Africa.
