Mock Cheese Cake.

MOCK CHEESE CAKE

Marie Biscuit base:

Packet of marie Biscuits (or digestive).
100gr butter 


First melt the butter, then crush the biscuits to fine crumbs using a rolling pin and combine them with the melted butter. Now press the biscuit mixture evenly over the base of a lightly oiled, 8 inch (20 cm) springform tin.  (If the biscuits appear a bit crumbly add a little more melted butter but not enough to make the mixture too wet or it will set hard!)

Filling:
1 Tin condensed milk
2 egg yolks
2 teasp cornflour
2 stiffly beaten egg whites
½ cup lemon juice
Mix condensed milk, cornflour, lemon juice and egg yolks together. Fold in stiffly beaten egg whites. Pour mixture into base and bake at 150˚ C for 20 minutes. When cool sprinkle top with Marie biscuit crumbs.
