Salmon Loaf (Microwave)
Serves 4
1 x 450 gr tin drained pink or red salmon
1 tblsp lemon juice
150 ml milk
75 gr fresh white bread crumbs
1 egg (beaten lightly)
1 tblesp freshly chopped parsley
salt & pepper to taste
25 gr butter
Put salmon and liquid into a bowl. Mash well and add all other ingredients except butter. Put the butter into a microwave loaf dish and melt for 30 seconds. Grease dish with melted butter. Put salmon mixture into dish and cook in microwave at 700 for approximately 8 mins (All microwaves vary). Leave to stand for 5 mins.
Serve hot or cold with vegetables or salads.
Note: This was a favourite dish that my mother used to cook regularly, it is easy to make and tastes really good hot or cold. Diane
