Shepherd's Pie - Easy

1 1/2 lbs lean minced beef
1 onion chopped
2 to 3 chopped garlic cloves
1-2 cups vegetables - chopped carrots, corn, peas, celery etc
1 1/2 - 2 lbs potatoes (3 large) Also good with 2 plain potatoes and one large sweet potato
2-3 tablesp oil
1 tin chopped tomatoes
1 teaspoon Worcestershire sauce
Salt, pepper, parsley other seasonings of choice


Peel and quarter potatoes, boil in salted water until tender (about 20 minutes).While the potatoes are cooking, add oil to saucepan and sauté onions and garlic till tender over medium heat (±10 mins).

If you are adding vegetables, according to cooking time. Put any carrots in with the onions. Add corn or peas either at the end of the cooking of the onions, or after the meat has initially cooked.

Add minced beef and sauté until no longer pink. Add salt and pepper & parsley. Add Worcestershire sauce and any other seasonings to taste. Add tin chopped tomatoes and cook, uncovered, over low heat for 30 minutes. Make sure that it does not boil dry, add stock if necessary. 

Mash potatoes in bowl with butter & milk, season to taste.

Place beef and onions in baking dish. Distribute mashed potatoes on top. Rough up with a fork so that there are peaks that will brown nicely.

Cook in 200 C oven until bubbling and brown (about 30 minutes). Grill for last few minutes if necessary to brown.

Serves four.
