Courgette (Zucchini) Jam.

COURGETTE JAM   (Zucchini)

1.2 kg courgette (chopped in small pieces)
Roughly 5 cms root of grated ginger
zest of one orange
Juice ½ orange
1 kg Jam sugar *

Bring quickly to the boil and boil for the time recommended by the make of sugar, mine is 5 minutes while stirring.

Bottle immediately and allow to cool.

 Different types of jam sugar may vary in cooking time. I invented this as I went along and it turned out really well in fact one of my French neighbours asked for the recipe so here it is. Diane


2012 - N.B.  I doubled up on the ginger, changed the orange to a lemon using all the juice from one lemon plus the zest.    Diane
